Salmon with Blueberry Mango Salsa

Summer is finally here so I thought I should share one of my favorite summer recipes. It is EASY, healthy and delicious! 

Ingredients: 

1/3 cup Blueberries

1/3 cub peeled, diced mango ( I buy peeled mangos at Trader Joe's! Huge time and headache saver)

2 tablespoons minced red onion

1 tablespoon minced fresh cilantro

1 tablespoon fresh lime juice

1/2 teaspoon minced jalapeño

2 teaspoons sugar or evaporated cane juice

1/4 teaspoon sea salt 

1/2 teaspoon Extra- virgin olive oil

4  4oz salmon filets

Pinch each sea salt and ground pepper (and/or Trader Joe's Every Day Seasoning to taste)- this is to put on the salmon filets

Directions 

  1. Combine blueberries, mango, onion, pepper, cilantro, limejuice, jalapeño, sugar or cane juice and salt in a medium bowl, Lightly crush with a fork to release juices.
  2. Heat olive oil in a large pan over medium-high heat. Season the salmon with salt and pepper (or Trader Joe's Everyday seasoning) and sear 3 to 5 minutes per side, or until just cooked through
  3. Serve fillets with salsa
  4. Revel in your culinary awesomeness!!!

Oh and I almost forgot!!! This dish pairs well with a light, crisp, summery white wine. Recently, I paired this with a Spanish white wine, Albariño I got from my WSJ wine club discovery pack.
