I'm not sure if this can be really classified as a chili but I had to name this dish for the sake of sharing it on this blog. I buy a few staples every week without a clear plan of what I'm going to do with them. These staples include ground turkey breast, jalapeño, onions and tomato. Sometimes I decide to make this "chili" dish. It's never exactly the same but it is always quick to make and it comes out yummy. I will not provide measurements as I really throw this together. The goal is for it to be quick and easy and for you to use this as a base but make it your own!
I suggest you get the freshest ingredients available. I get all of the ingredients at Trader Joe's.
Ground turkey, canned organic black beans, paprika, chili pepper, black pepper, garlic powder, lime juice, garlic salt (use sparingly so we can limit our sodium intake), one or two organic tomatoes (chopped), chopped green onion, FRESH jalapeño (chopped), fresh cilantro to taste and avocado. If there are other seasonings you like....by all means knock yourself out (again, just try to limit sodium). Sometimes I also use Trader Joe's Every Day Seasoning. It's the best.
1) Season the ground turkey
2) Brown seasoned ground turkey
3) Mix chopped tomato, chopped jalapeno, green onion and chopped cilantro in a bowl.
4) Squeeze lime juice on top of mixed veggies and stir. Set aside
5) Pour can of organic black beans on ground turkey and mix (keep heat at medium)
6) Add veggies and reduce heat and cover for 5 minutes.
7) Option: Top with sliced avocado if you want
The chili can be poured on top of brown rice or eaten alone. This dish has a good mix of protein, healthy carbs and fiber. It also is packed full of flavor. If you are counting macros or calories...by all means measure the ingredients to ensure it fits within your macros or calorie allotment. If you don't like cilantro or any of the other ingredients, leave them out! Point is, make this dish work for you! I like to make this on a Sunday night and eat for lunch or dinner through the week.
